My Everyday Life: Week 10 & Week 11

Long time, no see! Just kidding…it’s been about 3 weeks since I blogged last? Week 9 of My Everyday Life was VERY eventful with college and such so I didn’t find any time to blog OR take pictures. (not that you missed me) But I’m back and better than never!! Here’s my past (busy) but not busy 2 weeks! Enjoy!

I got this dress at a vintage store in Fayetteville, AR and its become my favorite (it even has pockets!!)Redbuds blooming at church!Getting that mileage in for my half marathon!We have been icing sugar cookies at my job lately and to celebrate spring and St. Patricks Day these are the ones we chose (aren’t the bunnies adorable?)
Baked some muffins that have been on my baking to-do list!
Recipe by the one and only Sally’s Baking Addiction: Raspberry Chocolate Muffins. Starting a new series at church on Wednesday nights involving this book. I’m super excited to see where it takes me!
When you don’t really want to go on a run after a PACKED day but decide to = this pretty sunset (payoff).
I tried making those banana pancakes you see with the bananas and eggs but they failed miserably (at least they tasted good!)
Countdown to my birthday! Isn’t this card the cutest?
Lady doing who knows what…probably creating a smelly smell if you know what I mean…
We shopping with my madre for prom and other things and stopped at Whole Foods. I’m like a kid in a candy shop when I go there…I could spend hours looking at all the different foods they have to offer.
Tried a tea/coffee/sushi place and got the White Chocolate Green Tea Latte. It was to die for!

Please excuse my sunburn :/Went for a chilly, rainy 5-mile run and it was tough but felt so good when I was done!
My favorite cold brew coffee…SO YUM.Cheered on our Tiger basketball teams from afar as they played in the state finals, sadly they both lost but played amazing seasons!
I FINALLY went on a “Valentine’s” date with my dad and I’m pretty sure the food was the highlight for me.
Brioche French Toast from the Dilly Diner in Tulsa, OK. Never disappoints.
Can you say stacked?! These were pretty dang good.

Week 11- SPRING BREAK!!!

My aunt always makes the GREATEST cards! She could sell them and start her own company. I just adore all of the cards she sends me! Definitely keepsakes.

We went hiking in Arkansas on Thursday of Spring Break and this water was such a pretty color!I heart candid shots. Funny story- at the end of this 6 (supposed to be 5) mile hike, the only way to get across was to go through this shallow but deep body of water. Now keep in mind it was probably about 55 degrees max and that water was as cold as heck. So we all took off our shoes and socks and walked across (I lost feeling in my feet but as sure as heck was not turning around to get back). Made for a memorable day for sure. The green amongst the brown caught my eye.
We traveled to Fayetteville for dinner and ate at another one of my favorite places: Thep Thai. I order Red Curry and it was delicious!Always gotta have that ice cream.
BIRTHDAY!!! Breakfast in bed with confetti buttermilk pancakes.
18! Legally adult, watch out world! 😉Coffee on my birthday because why not?
In order to eat all the good food I wanted biking was very necessary. We biked 11 miles and let me tell you, I was definitely feeling it the next day.

Macarons: I had a Pistachio and Pink Champagne. They were both divine!

A really good grilled cheese. 

My birthday cake this year was Coconut Lime, it was worth every calorie!Running off all that birthday cake!

Restart Juice

So recently I had a idea. It involved thinking of another healthy recipe as I was sipping on my Chai Tea Latte. I have no regrets on drinking it I will admit. I shouldn’t in this case because it was made with almond milk. But!, moving on to the juice.

This juice is sweet and has the right amount of vegetables to balance it out. The thing about juicing is how expensive it gets to just make one glass of juice. I’m not much of a juice drinker myself unless I make it myself in which this case I did. I am a bit sad about the color though. I was hoping a dark green not a mucky green. But nonetheless it was still delicious. I’d suggest sipping this juice in the morning with a cute straw and a bowl of cereal and whatnot.

Restart Juice

Makes 1 serving

* 2 Carrots, ends chopped off

* 2 Apples, cut in half

* 1 Orange, peeled

* 1 C Fresh Spinach

Juice as your juicer instructions suggest and enjoy!

Green Smoothie and Eggnog Muffins

New Year, New You am I correct? It’s already January second and my health buzz has gone kaput. BUT!, I am here to save it. I made these mouthwatering eggnog muffins this morning. They were unbelievably good and had me wishing I could stuff all twelve muffins into my mouth as fast as I could get them in. They had struesel and and eggnog glaze. They were so good that I could make them a milllion times more. But now those muffins are a thing of the past. Gone forever maybe because my body craved something healthy something that looks so healthy you just feel so good about it.

That’s were this Green Smoothie comes in. Yes you may have seen so many green smoothies everywhere but I’m here to tell you this one is different. It’s my own recipe that I am just astounded by. It looks so healthy you feel good without even drinking it. All you need is a blender and the ingredients listed below. Watch out though! This smoothie may cause extreme happiness and a health kick that will possibly last you throughout the year.

Kale, Chai Seed, PB2, Coconut Almond Banana Smoothie

Serves One

* 1 c Coconut Almond Milk Blend

* 1 Banana

* 2 T PB2 Chocolate Powder

* 1 t Chai Seeds

* 2 c Kale

* 3 Ice Cubes

1. Add 1/3 cup of almond milk to the blender along with the kale. Blend until smooth.

2. Chop banana into small slices and throw into the blender. Add PB2, Chai Seeds, and another 1/3 cup of almond milk. Blend Until smooth.

3. Add 3 ice cubes and blend, pour into a jar or a cute cup of your choice and drink up!
